Özet
Kırmızıbiber(İsot) (Capsicum annum L.) patlıcangiller familyasının Capsicum cinsine ait olup, Tükiye’de, Amerika’da, Avrupa’da ve orta Asya’da yetişen bir kültür bitkisidir. Bu çalışmada Şanlıurfa merkez köy ve ilçelerinden alınan altı farklı isot numuneleri ile Kahramanmaraş ili merkez ilçesinden alınan iki farklı isot numunelerinin ağır metal, toksikojik ve antioksidan içerikleri tespit edilerek, birbirleriyle kıyaslanmıştır. İsot numunelerinde mineral ya da ağır metal olarak Cu(Bakır), Fe(Demir), Hg(Civa), Cd(Kadmiyum), As(Arsenik), Pb(Kurşun), Ni(Nikel), Sn(Kalay), Zn(Çinko) ve Co(Kobalt) miktarları analiz edilmiştir. Bu analiz işlemi, mikrodalga ünitesinde yakma işlemi yapıldıktan sonra ICP-OES( indüktif eşleşmiş plazma optik emisyon spektrometre) cihazıyla, kırmızıbiber(isot) numunelerinin ağır metal ve mineral içerikleri üç paralel olarak tespit edildi. Besleyici özelliği dikkate alındığında bu ağır metallerden çinko(Zn) miktarı 1,602±0,001 mg/kg olarak ölçülmüş olup, bu değer JECFA tarafından belirlenen standart değer ile karşılaştırıldığında tespit edilen bu değerin, JECFA( Gıda Katkı Maddeleri Uzman Komitesi ) tarafından haftalık kabul edilebilir değerler aralıklarında olduğu tespit edilmiştir. Kırmızıbiber(İsot) numunelerinin Afla toksin derişimleri ise, ELIZA cihazı ile ölçülmüştür. Bu ölçümler sonucunda en yüksek derişim, değeri 3ppb ve en düşük derişim değeri ise 1.331ppb olarak ölçülmüş olup, ölçülen bu değerlerin, Türk Gıda Kodeksi yönetmeliğine göre belirlenmiş aralıklara, uygun aralıklarda oldukları tespit edilmiştir. Okra toksin derişimlerine bakıldığında ise en yüksek 7.17 ppb, en düşük 3.99 ppb olarak tespit edilmiş olup, aynı şekilde bu değerlerin de, Türk Gıda Kodeksi yönetmeliğine uygun aralıklarda oldukları tespit edilmiştir. Antioksidan aktivite analizlerinde ise Standart olarak sentetik antioksidanlar(Trolox, BHT ve BHA) kullanılarak, ABTS+ (Serbest Radikal Giderme), DPPH (Söndürücü Radikal Giderme) ve İndirgeme Güç Yöntemleri kullanılarak, bileşiklerin antioksidan aktiviteleri UV spektrofotometre cihazıyla tespit edilerek, bu aktivitelerin gerekli değerlendirmeleri yapılmıştır.
Red pepper (Capsicum annum L.) belongs to the Capsicum genus of the nightshade family and is a cultivated plant that grows in Turkey, America, Europe and Central Asia. In this study, heavy metal, toxicological and antioxidant contents of six different isot samples taken from Şanlıurfa central village and its districts and two different isot samples taken from the central district of Kahramanmaraş province were determined and compared with each other. Cu(Copper), Fe(Iron), Hg(Mercury), Cd(Cadmium), As(Arsenic), Pb(Lead), Ni(Nickel), Sn(Tin), Zn(Zinc) and Co(Cobalt) amounts were analyzed. After this analysis process was done in the microwave unit, heavy metal and mineral contents of red pepper (isot) samples were determined in three parallels with ICP-OES (inductively coupled plasma optical emission spectrometer) device. Considering its nutritional properties, the amount of zinc (Zn) from these heavy metals was measured as 1.602±0.001 mg/kg, and when this value is compared with the standard value determined by JECFA, this value determined by JECFA (Food Additives Expert Committee) is within the weekly acceptable ranges. has been found to be. Aflatoxin concentrations of red pepper (Isot) samples were measured with an ELIZA device. As a result of these measurements, the highest concentration value was measured as 3ppb and the lowest concentration value was 1.331ppb, and it was determined that these measured values were within the ranges determined according to the Turkish Food Codex regulation.
