Özet
Bu çalışmada Siirtʼte satılan tavuk kanatların bazı biyokimyasal özellikleri ve Campylobacter
türlerinin varlığının belirlenmesi amaçlanmıştır. Siirt merkezde bulunan marketlerde satılan on beşi
marine edilmiş ve on beşi de marine edilmemiş otuz adet tavuk kanat örneği incelenmiştir. Marine
edilmiş örneklere ait aw, pH ve O/R potansiyeli değerleri sırasıyla 0.96-0.97, 6.45-6.75 ve 38.10-56.90
aralığında belirlenirken, marine edilmemiş kanatlarda bu değerlerin 0.96-0.98, 6.58-7.17 ve 22.30-
53.40 aralığında olduğu anlaşılmıştır. Ayrıca, marine edilmiş ızgaralık tavuk kanatlarının tamamında
Campylobacter spp. bulunmuş, bu örneklerin onunda C. jejuni, altısında C. coli, ikisinde C.
upsaliensis tanımlanırken, C. laridisʼe rastlanılmamıştır. Diğer taraftan örneklerin tamamında diğer
Campylobacter türleri tespit edilmiştir. Marine edilmemiş ızgaralık tavuk kanatlarının on ikisinde
Campylobacter spp. izole edilmiş, bu izolatların dördünde C. jejuni, üçünde C. coli, üçünde C.
upsaliensis, üçünde C. laridis ve üçünde de diğer Campylobacter türleri tanımlanmıştır. Sonuç olarak,
tavuk kanatlarında önemli oranlarda Campylobacter türleri bulunduğu ve bu ürünlerin halk sağlığı
açısından risk oluşturabileceği kanaatine varılmıştır.
In this study, it was aimed to determine some biochemical properties and the presence of Campylobacter species of chicken wings sold in Siirt. Thirty chicken wing samples, fifteen of which were marineted and fifteen of which were not marineted, sold in the markets in the centre of Siirt were examined. While aw, pH and O/R potential values of marineted samples were determined in the range of 0.96-0.97, 6.45-6.75 and 38.10-56.90, respectively, these values were found to be between 0.96- 0.98, 6.58-7.17 and 22.30-53.40 in non-marineted wings. In addition, Campylobacter spp. was found in all of marineted grilled chicken wings, while C. jejuni was found in ten, C. coli in six, and C. upsaliensis in two, but not C. laridis. On the other hand, other Campylobacter species were detected in all the samples. Campylobacter spp. was isolated in twelve of the unmarineted chicken wings, and C. jejuni was isolated in four, C. coli in three, C. upsaliensis in three, C. laridis in three, and other Campylobacter species in three. As a result, it was concluded that there are significant amounts of Campylobacter species in chicken wings and these products may pose a risk to public health.
